Dill & Potato Cakes
A gorgeous accompaniment to baked beans and a runny poached egg, these potato cakes are the ultimate comfort food which simply melt in the mouth.
Ingredients
- 2 cups of self-raising flour
- 3 tbsp softened butter
- Pinch of salt
- 1 tbsp finely shopped, fresh dill
- 1 cup freshly made mashed potato
- 2 – 3 tbsp milk
- Dill sprigs to garnish
- Butter to serve
Method
Preheat the oven to 230c/Gas mark 8
Grease a baking sheet
Sift the flour into a bowl and add the butter, salt and dill
Now, working quickly, add the mashed potato and mix it in with enough of the milk to make a soft, pliable dough
Roll out the dough until it is fairly thin
Cut into neat rounds with a 3" cutter
Arrange on the prepared baking sheet and bake for 20 – 25 minutes until golden
Serve with butter, garnished with dill

- In the middle ages, dill was thought to prevent against witchcraft
- The name 'dill' is thought to have originated from a Norse or Anglo Saxon word 'dylle' meaning to 'sooth' or 'lull' as the herb has the carminative property of relieving wind.
