Thai Lemon Grass and Pumpkin Soup
A spicy Thai variety of a traditional pumpkin soup - the perfect excuse to buy a bigger pumpkin for Halloween! You can make a spicy version by adding 2 small red chilli peppers (finely chopped). A really quick and easy Autumn warmer.
Ingredients
- 15 ml vegetable oil
- 15 g butter
- 1 clove garlic, chopped
- 4 shallots, chopped
- 5 g chopped lemon grass
- 505 ml chicken stock
- 1lb/455 g peeled and diced pumpkin
- 355 ml unsweetened coconut milk
- 1 bunch fresh basil leaves
Directions
In a medium saucepan, heat the oil and butter over low heat. Cook the garlic, shallots, chillies (optional), and the lemongrass in the oil until fragrant (be careful not to burn the garlic). Stir in the chicken stock, coconut milk, and pumpkin.
Bring to the boil and simmer until pumpkin softens.
In a blender, blend the soup in batches to a smooth or slightly chunky consistency depending on your preference. Serve the basil leaves torn on top.
