Pineapple & Marjoram Cocktail
Stir 2 tbsp fresh marjoram in 600ml fresh pineapple juice and chill.
When ready to serve, strain the juice and add 300 ml sparkling mineral water and a dash of bitters.
Pour a measure of vodka into a glass with ice and top with the pineapple juice mixture.
Garnish with marjoram flowers
Herbed Cuban Chicken
This fusion of Cuban and Asian tastes appeals to the adventurous. Plenty of fresh herbs and aromatics spices makes this chicken dish zingy and really gets the taste buds going.
For the marinade
- 1 onion, chopped finely
- 2 garlic cloves, chopped
- 1 medium red hot chilli, deseeded and chopped
- 2 shots of Tabasco
- Handful of fresh flat leaf parsley
- 1 tbsp fresh marjoram, chopped
- 1 tsp ground cumin
- 1 tbsp white wine vinegar
- 3 tbsp olive oil
- Juice of 1 lime
- 3 tbsp pine kernels, roughly chopped
- Season with freshly ground black pepper
Plus
- 4 boneless skinless chicken breasts
- 2 Fresh Bay Leaves
Mix all the marinade ingredients in a food processor. Place the chicken in a shallow dish and pour the marinade over the chicken, adding the bay leaves.
Leave to marinate for at least half an hour, turning occasionally. Remove the chicken from the marinade, leaving a nice coating on the meat and place in a shallow baking dish. Bake in a preheated oven at 200oc/gas mark 6 for 25 – 30 minutes. Serve with steamed courgettes and carrots and fresh tomato salsa.
